Tasty Treat Tuesday - Yummy Apple Pupcakes

After a long weekend of getting my Rabies shot and visiting Petco for the first time I decided to take Monday to relax.  Now it's Tuesday.  My favorite day of the week because I get to try out new treat recipes!  Yum!

Yummy Apple Pupcakes

 
 
 
 
You will need:
  • 1 cup whole wheat flour
  • 2 tsp. baking powder
  • 2/3 cup olive oil
  • 2/3 cup applesauce
  • 2 eggs
  • 4 tablespoons honey
  • 2 apples peeled and shredded
  • 1/2 cup plain Greek yogurt
  • (optional) food coloring
 
Preheat oven to 350 degrees F.
 
In a mixing bowl, stir the flour, baking powder, olive oil, applesauce, eggs, shredded apples, and honey until well combined.
 
Insert cupcake liners into a muffin or cupcake pan. Spoon mixture into cupcake liners, filling each about halfway.
 
Bake for about 10 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
 
Allow cupcakes to cool to room temperature.
 
Meanwhile, in a bowl, stir yogurt and food coloring until you get desired color.  Use a spatula to frost the cupcakes.
 
Store in refrigerator for up to 1 week.
